This recipe is beginner-friendly and great for meal prep or kids' lunch boxes. Follow along for my tips on getting that perfect vibrant green color and rich aroma.
The Recipe: Mint Rice
Ingredients
For the Paste:
1 bunch Fresh Mint leaves (washed) [00:14]
1 bunch Fresh Coriander leaves (washed) [00:22]
1-inch piece of Ginger [00:40]
2 Garlic cloves [00:40]
2 Green chilies [00:40]
For the Tempering (Tadka):
1/3 cup Oil [01:43]
1 tsp Mustard seeds [00:28]
1 tbsp Urad Dal (washed) [00:28]
2 Dried Red chilies [00:40]
Curry leaves [01:52]
1/4 cup Cashews [00:40]
1 Onion (thinly sliced lengthwise) [01:24]
Other Ingredients:
2 cups Pre-cooked Rice (Basmati preferred) [00:52]
2 tbsp Tamarind paste/pulp [00:40]
1 tsp Salt (or to taste) [00:28]
2 tbsp Desi Ghee (for finishing) [03:33]
Instructions
Prepare the Paste: Blend the mint leaves, coriander leaves, ginger, garlic, and green chilies into a smooth paste. Use a very small amount of water if needed [01:05].
Heat Oil & Sizzle: In a kadhai, heat 1/3 cup oil. Add mustard seeds, red chilies, and urad dal. Sauté until the dal turns light brown [01:43].
Add Aromatics: Toss in the curry leaves, followed by the sliced onions. Cook the onions only until they are transparent; do not overcook them as they should provide a slight crunch [02:05].
Fry Cashews: Add the cashews to the kadhai and sauté for a minute until they are lightly toasted [02:18].
Cook the Base: Pour in the prepared green mint paste and mix well. Add 2 tablespoons of tamarind pulp and 1 teaspoon of salt. Cook on medium flame until the mixture starts releasing oil [02:31].
Mix Rice: Add the pre-cooked rice to the mixture. Gently mix until every grain is coated in the green paste and the rice turns a beautiful light green [02:59].
Final Simmer: Cover and cook on low flame for about 5 minutes to allow the flavors to soak into the rice [03:23].
The Finishing Touch: Drizzle 2 tablespoons of desi ghee over the rice to enhance the flavor and give it a glossy finish [03:33].
