Stuffed Capsicum (Bharwan Shimla Mirch) Recipe
We recommends using small capsicums as they cook better and taste more delicious [03:42].
Ingredients
7 small Capsicums (Shimla Mirch) [00:08]
4 large Potatoes [00:19]
3 Green Chilies [00:08]
Coriander Leaves (for garnish) [00:08]
Ginger and Garlic (coarsely ground) [01:15]
Vegetable Oil (1/3 for filling, 2 tsp for cooking) [02:02]
Dry Spices for Filling:
1 tsp Cumin Seeds (Jeera) [02:02]
1 Red Chili (whole) [02:02]
1/2 tsp Turmeric Powder [02:16]
1/4 tsp Red Chili Powder [02:16]
1 1/2 tsp Garam Masala Powder [02:16]
1 tsp Salt (or to taste) [02:30]
Instructions
1. Prepare the Capsicums and Potatoes
Boil the Potatoes: Pressure cook the 4 large potatoes, giving 3 to 4 whistles until they are well-cooked [00:28].
Clean the Capsicums: Remove all the seeds from the inside of the 7 capsicums to make space for the stuffing [00:39].
Prep Aromatics: Finely chop the green chilies and coriander leaves [01:08].
Prep Ginger/Garlic: Coarsely grind the ginger and garlic—do not make a very fine paste [01:15].
Mash Potatoes: Once boiled, peel the potatoes [01:33] and coarsely mash or cut them with a knife; do not mash them completely into a paste [01:41].
2. Make the Stuffing (Aloo Filling)
In a pan, take about 1/3 of the vegetable oil. Add 1 teaspoon of cumin seeds and the whole red chili [02:02].
Add the coarsely ground ginger and garlic paste and sauté for 2 minutes [02:10].
Add the dry spices: 1/2 teaspoon turmeric powder, 1/4 teaspoon red chili powder, and 1 1/2 teaspoon garam masala powder [02:16]. Mix well.
Add the coarsely mashed potatoes [02:27].
Add 1 teaspoon of salt [02:30]. Mix all the ingredients well and sauté the mixture on the heat for a little while.
Add the chopped green chilies and coriander leaves [02:41]. The filling is now ready.
3. Stuff and Cook the Capsicums
Stuff: One by one, begin filling the capsicums with the potato mixture [02:50]. Ensure the capsicums are well-stuffed, but be careful not to apply too much pressure or the capsicum may tear [03:03].
Cook: In a separate pan, add 2 teaspoons of oil [03:17].
Place all the stuffed capsicums inside the pan and cover it with a lid [03:23].
Cook on a very low flame (dhimi aanch) to ensure they cook thoroughly and do not burn [03:30].
The Stuffed Capsicums can be enjoyed with yogurt (dahi), roti, or chapati [03:36].
