Milk cake is a cherished Indian sweet with a rich and unique history. Recipe for Milk Cake:
Ingredients
7 cups whole fat milk
1/2 cup granulated sugar (brown sugar can also be used)
1 1/2 tbsp desi ghee
2 tbsp vinegar
Sliced almonds for garnish
Instructions
Pour the 7 cups of whole fat milk into a wok and bring it to a boil [00:23].
Keep stirring the milk until it reduces to half its original quantity [00:33].
Add 2 tablespoons of vinegar and continue stirring until the milk curdles and reduces to about 25% of its original volume [00:42].
Add half of the granulated sugar and stir until it's well combined [00:54].
Add the remaining sugar and the 1 1/2 tablespoons of desi ghee [01:00].
Continue to stir until all the water has evaporated from the mixture [01:11].
Grease a pan with ghee to prevent the mixture from sticking [01:15].
Place the milk cake mixture into the greased pan and level it with a spatula [01:32].
Garnish the top with sliced almonds [01:38].
Let the mixture cool for at least one hour [01:59].
