Ingredients
Mawa/Khoya (Dried Milk Solids): This is the main ingredient. The video shows a large block of khoya being crumbled into the pan [00:24].
Ghee (Clarified Butter): Used for roasting.
Cardamom Powder (Elachi Powder): Used for flavor.
Bura / Tagar (Coarse Powdered Sugar): This is the specialized, slightly coarse sugar used for dusting and providing the signature texture. Regular powdered sugar or fine granulated sugar can be substituted, but Bura is traditional.
Instructions
1. Roast the Khoya
Crumble the Mawa (Khoya) into a thick-bottomed pan or kadai [00:24].
Roast the khoya on a low-to-medium flame while stirring continuously [00:26]. This step is crucial and takes time.
Continue roasting until the khoya mixture turns a deep, beautiful caramel brown color. The low, slow roasting is what gives Mathura Peda its characteristic color and flavor.
2. Add Flavoring
Once the khoya is roasted to the desired dark color, remove it from the heat.
Stir in a little bit of Ghee (if the mixture appears too dry).
Add the Cardamom Powder (Elachi Powder) and mix well.
3. Incorporate the Sugar
Let the roasted mixture cool down slightly until it is just warm enough to handle.
Add a portion of the Bura (coarse powdered sugar) to the warm khoya mixture and mix until it is fully incorporated and the mixture comes together like a dough.
4. Shape and Coat
Take small portions of the khoya dough and roll them into smooth, round balls [01:45].
Gently press the center of each ball to flatten it slightly into the traditional peda shape [01:51].
Take the remaining Bura and spread it on a plate.
Roll the finished pedas in the Bura until they are completely coated in the coarse sugar, giving them their final rustic, snow-dusted appearance [02:08].
