Full recipe for Medu Vada:
Ingredients
1 cup of split urad dal [00:07]
1 tablespoon of rice flour [00:59]
1 teaspoon of salt [01:04]
½ teaspoon of garam masala [01:03]
¼ teaspoon of black pepper [01:05]
1 small onion [00:11]
1 small piece of ginger [00:11]
3 green chilies [00:11]
Coriander leaves [00:10]
Curry leaves [00:10]
Instructions
Take 1 cup of split urad dal and soak it for 6 hours [00:07].
Finely chop the onion, ginger, green chilies, coriander leaves, and curry leaves [00:16].
Put the soaked urad dal into a blender, add a little cold water, and blend it into a paste [00:27].
Take the paste out and place it in a bowl [00:44]. Whisk it properly to make it airy and fluffy [00:47]. You can check if it's ready by putting a small amount in a water bowl; it should float [00:55].
Add the rice flour, salt, garam masala, and black pepper to the paste [00:59].
Mix in the chopped onion, ginger, green chilies, coriander leaves, and curry leaves [01:08].
Heat oil in a pan for frying [01:31].
To make the vadas, wet your hands with water to prevent the mixture from sticking. Take a small portion of the mixture, shape it like a small patty, and make a hole in the middle [01:35].
Place the vadas into the hot oil [01:43]. Cook them on both sides until they are golden brown [01:54].
