Perfect Jalebi at Home (Instant Jalebi)
Crispy, juicy, saffron-syrup-soaked spirals — halwai-style jalebi made easy at home
Crispy on the outside, juicy inside — homemade jalebi made with a simple short-fermented maida-and-yogurt batter. Pipe golden spirals into hot oil, fry until crisp, then soak in warm saffron-cardamom syrup for that classic melt-in-the-mouth sweetness. A festive favourite that's easier than you think.
Ingredients
Batter
- 1 cup all-purpose flour (maida)
- ¼ cup sour yogurt
- 2 tbsp desi ghee
- ¼ tsp baking soda
- Lukewarm water, as needed (for a smooth, runny batter)
- 1 pinch yellow food colour (added after fermentation)
Sugar Syrup (Chashni)
- 1½ cups sugar
- ½ cup water
- A few saffron strands
- A few green cardamom pods
- A few drops of lemon juice
- 1 pinch yellow food colour
For Frying & Garnish
- Oil or ghee, for frying
- Sliced almonds / dry fruits, to garnish
Instructions
- Prepare the Batter. In a mixing bowl, combine the all-purpose flour, baking soda and desi ghee, mixing until the ghee is evenly incorporated. Add the sour yogurt and mix well. Gradually add lukewarm water and whisk into a smooth, lump-free, runny batter (don't make it too thick). Cover and rest in a warm place for at least 30 minutes to ferment.
- Make the Sugar Syrup. In a pan, combine 1½ cups sugar and ½ cup water. Add the saffron and crushed green cardamom and bring to a boil over medium heat. Stir in a few drops of lemon juice (to prevent crystallising) and a pinch of yellow food colour. Cook to a one-string consistency, then turn off the heat and keep warm.
- Fill the Dispenser. Add a pinch of yellow food colour to the fermented batter and mix thoroughly. Pour the batter into a squeeze bottle (a clean ketchup bottle works well) or a piping bag.
- Fry the Jalebis. Heat oil in a wide, flat-bottomed pan over low to medium heat (avoid high heat, or they'll burn). Squeeze the batter in concentric circles from the centre outward to form spiral jalebis. Fry on both sides, flipping occasionally, until crisp and golden.
- Soak in Syrup & Serve. Remove the jalebis, drain the excess oil, and immediately dip them into the warm syrup. Flip so both sides soak for about 1–2 minutes. Arrange on a plate, garnish with sliced almonds and serve warm — great with rabri or cold milk!
Pro tip: Rest the batter in a warm spot so it ferments slightly — that's what gives jalebi its signature tang and crispness. Fry on low-medium heat for even, golden spirals, and dip them hot into warm (not thick) syrup so they stay crisp while soaking up the sweetness.
The Story Behind This Dish
Jalebi has travelled a long way to India's sweet shops. It is widely traced to the Persian-Arabic sweet 'zalabiya' (or 'zulbia'), which reached the Indian subcontinent with medieval traders and cooks. A jalebi-like sweet appears in Indian texts by around the 15th century, and today the crisp, syrup-soaked spiral is a beloved festival and street-food treat across India, Pakistan and beyond.
