Ingredients:

1 kg of kundru (or tindora)

2 tomatoes

1 onion

3 garlic cloves

1 small piece of ginger

3 green chilies

Coriander leaves

1 teaspoon cumin seeds [00:49]

1 red chili [00:51]

1 tablespoon garam masala [00:58]

1 teaspoon turmeric powder [00:59]

1 teaspoon salt

1/2 teaspoon red chili powder

1/4 cup of oil [00:47]

Preparation:

Chop the onion into small pieces.

Blend the tomatoes, ginger, garlic, and green chilies to create a paste.

Chop the coriander leaves.

Cut the kundru into long pieces.

Cooking Process:

Heat 1/4 cup of oil in a pan.

Add cumin seeds and a red chili to the hot oil.

Once the spices are slightly brown, add the chopped onion and sauté for 5 minutes.

After the onions turn brown, add the blended tomato paste and all the powdered spices (garam masala, turmeric powder, salt, and red chili powder).

Mix everything well and cook until the oil separates.

Add the sliced kundru and cook until they become soft.

Cover the pan with a lid to cook the kundru until they are soft.

Once cooked, add the chopped coriander leaves and mix.

The dish is now ready to be served.
