For the Chicken Mixture:
Chicken: 2 cups of shredded cooked chicken (you can use drumsticks or breast meat) [00:14], [00:57]
Cheddar Cheese: 1 cup, shredded [00:21]
Cream Cheese: 1 cup [00:36]
Spring Onion: 1/4 cup, chopped [00:36]
Buffalo Hot Sauce: 1/4 cup [00:36]
Seasoning: 1/2 tsp each of Salt and Black Pepper [01:53]
For the Coating & Frying:
All-Purpose Flour: 1 cup [02:38]
Cornstarch: 2 tbsp [02:38]
Egg: 1 egg [02:38]
Breadcrumbs: For final coating [03:18]
Additional Seasoning: 1/2 tsp each of Salt and Black Pepper [02:38]
Liquid: Water (as needed for the paste) [02:52]
Oil: For frying and coating hands [02:01], [03:45]
Instructions
Step 1: Prepare the Chicken Mixture
Shred the Chicken: Use two forks to shred your pre-cooked chicken finely to make it easier to mix [00:45].
Mix Ingredients: In a bowl, combine the shredded chicken, shredded cheddar cheese, chopped spring onions, buffalo hot sauce, and cream cheese. Break up the cream cheese as you add it to ensure it blends evenly [01:10].
Season: Add salt and black pepper and mix well until you reach a consistent, moldable texture [01:53].
Step 2: Form the Bites
Shape: Coat your hands with a little oil to prevent sticking. Scoop a portion of the mixture and roll it into a small ball [02:01].
Set: Place the balls on a plate and let them sit for 15 minutes to firm up [02:27].
Step 3: Create the Coating
Prepare Paste: In a separate bowl, whisk together the flour, cornstarch, egg, salt, and black pepper. Add water gradually until you have a slightly runny (not thick) consistency [02:38].
Coat: Dip each chicken ball into the flour paste to create a thin layer, shake off any excess, and then roll it in breadcrumbs until fully covered [03:13].
Step 4: Fry and Serve
Fry: Heat oil in a pan. Fry the balls until they turn a beautiful golden brown [03:45].
Note: Avoid over-frying, or the cheese may melt and leak out [03:57].
Serve: These bites are best served with a blue cheese dipping sauce [04:15].
