Soft & Fluffy Whole Wheat Bhaturu (Mountain Pita Pockets)

These Mountain Pita Pockets (Bhaturu) are a traditional staple from the mountains of Himachal Pradesh. Naturally fermented and made with 100% whole wheat flour, they're a healthy, airy alternative to store-bought pita — perfect for stuffing or serving with your favorite curry.
Ingredients
For the Dough
- 3 cups whole wheat flour (atta)
- 2 tsp salt
- 1 tbsp yogurt (dahi)
- 2 packets instant yeast
- Lukewarm water (as needed for kneading)
- Ghee for brushing (optional)
Instructions
- Prepare the Dough. In a large mixing bowl, combine the whole wheat flour, salt, and instant yeast. Mix well so the yeast is evenly distributed. Add the yogurt and mix again using your hands.
- Knead. Gradually add lukewarm water and knead until you have a smooth, soft dough. Keep the water only lukewarm — too hot will kill the yeast, too cold won't ferment properly.
- First Fermentation. Cover the dough with a warm cloth and place it in a warm spot for 2–3 hours, until it rises and develops those signature airy pockets.
- Shape the Pockets. Once the dough has doubled in size, divide it into small, equal-sized balls, dusting with dry flour. Flatten each ball using only your hands — avoid a rolling pin, which presses the air out — and gently shape into circles with your fingers.
- Second Fermentation. Cover the shaped circles with a cloth and let them rest for another 20 minutes. This second rest is the secret to getting them to puff up perfectly on the heat.
- Cook (two ways). Heat a tawa (griddle) over medium-high heat. Dry method: cook both sides until golden brown — it will naturally puff into a pocket; finish directly over an open flame for a few seconds for extra fluffiness. Ghee method: brush both sides with a little ghee while cooking to keep the pita extra soft and add rich flavor.
- Serve. Serve hot with a rich gravy, a dry vegetable dish, or your favorite chutney. For a modern twist, cut them in half and stuff with fresh salad and grilled paneer or chicken!
Pro tip: Shape the dough with your fingers, never a rolling pin — it preserves the air bubbles from fermentation so the bread puffs up soft and fluffy. If your kitchen is cold, let the dough rise inside a turned-off oven with the light on.
