The Recipe
Ingredients:
1 cup sooji (semolina) [00:08]
½ cup desi ghee [00:12]
½ cup brown sugar [00:14]
¼ cup sliced almonds [00:17]
2 cups water [00:20]
Instructions:
Melt Ghee and Roast Sooji: Add ½ cup desi ghee to a pan. Once melted, add 1 cup sooji (semolina) [00:21]. Roast the sooji until it turns a light brown color, making sure it doesn't get dark brown [00:30]. This process takes about 20-25 minutes.
Add Almonds: Once the sooji is brown, add ¼ cup sliced almonds and roast for another 3 minutes [00:49].
Add Water and Sugar: Carefully add 2 cups of water and ½ cup of brown sugar to the pan [00:56].
Cook Halwa: Stir continuously until all the water is absorbed and the halwa thickens and dries out [01:10].
Serve: Serve hot and garnish with additional sliced almonds if desired [01:25].
