For the Dhaba (Granulated Batter):
Besan (Chickpea Flour)
Ghee (Clarified Butter)
Milk
For the Mohanthaal/Fudge:
Ghee (a larger quantity for roasting)
Sugar
Water
Cardamom Powder (Elachi Powder) [02:35]
Saffron Strands (Kesar) [02:37]
Chopped nuts (Pistachios, Almonds) for garnishing [02:53]
Instructions
1. Prepare the Dhaba (Granulated Besan)
Take the Besan (chickpea flour) in a bowl [00:26].
Sprinkle a small amount of Ghee [00:27] and Milk [00:29] over the flour.
Mix the mixture well with your fingertips. The goal is to create a crumbly, coarse, and wet texture. This process is called giving daba [00:30].
Pass the crumbly mixture through a fine-mesh sieve to ensure all the flour is uniformly granulated and clump-free [00:34].
2. Roast the Besan
Heat a generous amount of Ghee in a thick-bottomed pan or kadai [00:36].
Once the Ghee is hot, add the prepared Dhaba (granulated besan) to the pan [00:39].
Roast the mixture on a low to medium flame, stirring continuously [00:43]. This is a slow process that develops the flavor.
Continue roasting until the mixture turns golden brown and releases a rich, nutty aroma [01:12].
3. Prepare the Sugar Syrup (Chashni)
In a separate pot, combine Sugar and Water [01:21].
Heat the mixture until the sugar dissolves and the syrup comes to a boil [01:23].
Cook the syrup to the desired consistency (typically a soft-ball or one-string consistency is used for Mohanthaal).
4. Combine and Set
Turn off the heat under the roasted besan [01:27].
Immediately pour the hot sugar syrup over the hot roasted besan mixture [01:28]. The mixture will bubble and sizzle.
Quickly and thoroughly mix the syrup into the besan until it is fully absorbed and the mixture thickens [01:34].
Add Cardamom Powder and Saffron strands [02:35] and mix one last time.
Transfer the Mohanthaal mixture to a pre-greased tray or plate [02:44] and use a spatula to press and level the surface [02:48].
Garnish immediately with chopped nuts [02:53].
