Holi Special Gujiya Recipe | Halwai Style Crispy Mawa Gujiya | Simply Delicious India
Halwai-Style Mawa Gujiya (Holi Special)
Extra-crispy gujiya with rich khoya and dry-fruit filling
Crispy gujiya — flaky maida dough with moyen ghee, stuffed with roasted mawa, powdered sugar, cardamom, and nuts, shaped in a mould and fried golden. A Holi and Diwali essential.
Ingredients
Dough
- 2 cups all-purpose flour (maida)
- 4 tbsp ghee (moyen)
- Water, as needed
- Pinch of salt
Filling
- 1 cup mawa (khoya)
- ½ cup powdered sugar
- ½ cup chopped mixed dry fruits
- 1 tsp green cardamom powder
- 1 tbsp desi ghee, for roasting filling
Frying
- Ghee or oil, for deep frying
Instructions
- Dough. Rub flour with ghee and salt; knead a firm dough. Rest.
- Filling. Roast mawa lightly in ghee; mix with sugar, nuts, and cardamom. Cool.
- Shape and fry. Fill dough rounds, seal with gujiya mould, and fry on medium-low until crisp and golden.
Pro tip: Medium-low frying is non-negotiable — it cooks the pastry through while giving that shatteringly crisp halwai shell.
The Story Behind This Dish
Gujiya is Holi's signature sweet in North India — exchanging plates of crisp, khoya-filled crescents is as much a part of the festival as colour and song.
