Khatti Meethi & Spicy Banana Chutney

A sweet, tangy & spicy banana chutney — perfectly non-mushy

A unique Indian chutney that blends sweet, tangy and spicy in every bite. Firm ripe bananas simmer in a tamarind-jaggery base tempered with fenugreek, carom seeds and whole red chillies — cooked gently so the banana pieces stay soft but never mushy. A mouth-watering side that pairs beautifully with rice, roti, puri, or dal-sabzi.

  • 3 ripe bananas (firm, not overripe or raw), cut into bite-sized pieces
  • ¼ cup tamarind (imli)
  • Jaggery (gur), to taste
  • 2 cups warm water

Tempering & Spices

  • ¼ cup oil
  • 2 whole dry red chillies
  • ½ tsp fenugreek seeds (methi)
  • 1 tsp carom seeds (ajwain)
  • ½ tsp black pepper
  • ¼ tsp turmeric powder
  • 2 tsp red chilli powder
  • Salt, to taste

Instructions

  1. Prepare tamarind pulp. Soak ¼ cup tamarind in 2 cups of lukewarm water. Mash well and strain to get a smooth, thick tamarind pulp.
  2. Prep the bananas. Peel the bananas and cut into small bite-sized pieces. Use just-ripe (firm) bananas so the chutney doesn't turn mushy.
  3. Make the tempering (tadka). Heat ¼ cup oil in a pan. Add the whole red chillies and fenugreek seeds and let them sizzle for a few seconds, then add the carom seeds and sauté briefly.
  4. Simmer the base. Pour in the tamarind pulp. Add turmeric, black pepper, red chilli powder, jaggery and salt.
  5. Cook the sauce. Let it boil and simmer for about 10 minutes, until the oil starts to separate and the sauce is slightly thick.
  6. Add the bananas. Gently stir in the banana pieces. Cook another 10 minutes on low-medium heat until they soften and soak up the flavours.
  7. Serve. Serve warm. It pairs beautifully with rice, roti, puri, or as a side with any dal and sabzi.

Pro tip: Use firm, just-ripe bananas and keep the heat on low-medium once they go in — that's the secret to a non-mushy chutney where the pieces hold their shape while soaking up the sweet-tangy-spicy sauce.
