Dry Fruits: 1 cup Almonds, 1/2 cup Pistachios, 1 cup Cashews, 1/2 cup Walnuts [00:30]
Edible Gum (Gond): 1/4 cup [00:30]
Melon Seeds (Char Magaz): 1/4 cup [00:41]
Desi Ghee: 250g total [00:41]
Preparation Steps
1. Prepare the Turmeric
Wash the raw turmeric thoroughly to remove dirt, then peel the skin [00:49].
Grate all the turmeric. (Tip: Use gloves to avoid staining your hands yellow) [01:14].
2. Roast Dry Fruits and Gond
Heat 2 tablespoons of ghee in a pan. Roast the almonds, cashews, pistachios, and walnuts until they are crispy and the moisture is gone [01:45]. Remove and set aside to cool.
In the same pan, add a teaspoon of ghee and fry the edible gum (gond) until it puffs up [02:22]. Remove and set aside.
Briefly roast the melon seeds in the same pan [02:41].
3. Cook the Turmeric and Flour
Add 1/2 cup of ghee to the pan and add the grated turmeric. Roast for 15–20 minutes until the raw smell disappears and the moisture dries up [02:48].
In a separate 1/4 cup of ghee, roast the wheat flour until it turns light brown [03:17].
4. Grinding and Mixing
Once cooled, coarsely grind the roasted dry fruits (do not make a fine powder) [03:34].
Grind the fried gond as well [04:07].
In a large mixing bowl, combine the ground dry fruits, ground gond, roasted turmeric, and roasted wheat flour [04:20].
5. Assemble the Ladoo
Add the powdered sugar to the mixture once it is lukewarm (if it's too hot, the sugar will melt) [04:39].
Add a bit of melted ghee if needed for better binding [04:58].
Press the mixture firmly in your hands to form medium-sized balls [05:04].
