Adorable heart-shaped chicken kebabs that are juicy, healthy and full of flavour. The seasoned ground chicken is flattened, stamped with a heart cutter and pan-grilled until lightly browned — no skewers or tandoor needed. A fun, romantic starter that's perfect for date night, Valentine's or any special occasion.

Ingredients

Meat & Bindings

  • 1 lb ground chicken
  • ¼ cup breadcrumbs
  • 2 tbsp desi ghee

Aromatics & Herbs

  • 1 onion, finely chopped
  • 3 garlic cloves
  • 1 piece ginger
  • 2 green chillies, finely chopped (or more to taste)
  • Fresh coriander leaves, finely chopped

Spices

  • 1 tsp red chilli powder
  • ¼ tsp black pepper
  • 1 tsp salt

Instructions

  1. Prep the aromatics. Finely chop the onion, green chillies and coriander leaves. Make a coarse paste out of the ginger and garlic.
  2. Mix the kebab mixture. In a large bowl with the ground chicken, add the chopped onion, coriander, green chillies, ginger-garlic paste, breadcrumbs, red chilli powder, black pepper, salt and desi ghee. Mix everything together thoroughly.
  3. Refrigerate. Chill the mixture in the fridge for at least 30 minutes so the flavours blend and the spices enhance the meat.
  4. Roll and flatten. Lay out a sheet of parchment paper and spray it with a little oil. Grease your hands too, then place the chicken mixture on the parchment and flatten it into a thin, even layer.
  5. Cut into hearts. Use a heart-shaped cookie/food cutter to stamp out kebabs from the thin layer. Gently lift them out one by one and neaten the edges with your hands if needed.
  6. Cook. Grill the kebabs on a skillet over medium flame (avoid high heat so they don't burn outside and stay raw inside). Flip halfway and cook until evenly light brown on both sides.

Pro tip: Chilling the mixture and keeping the flame on medium are the two keys — cold, rested meat holds the heart shape while shaping, and gentle heat keeps the kebabs juicy inside instead of drying out or burning.
