Cucumber Mint Raita
A cool, creamy 2-minute yogurt side dish
A refreshing Indian raita that comes together in minutes. Smooth whisked yogurt is folded with grated cucumber, fresh mint and coriander, then seasoned with roasted cumin, black salt and a touch of chaat masala. Light, cooling and great for digestion β the perfect companion to biryani, pulao, hot parathas, or any spicy meal.
Ingredients
Main
- 1 cup plain yogurt (curd/dahi), whisked smooth
- Β½ cup cucumber, finely grated or chopped (excess water gently squeezed out)
- 2 tbsp fresh mint leaves, finely chopped
- 1 tbsp fresh coriander/cilantro, finely chopped (optional)
Seasoning
- Β½ tsp roasted cumin powder (bhuna jeera)
- ΒΌ tsp black salt (kala namak) or regular salt, to taste
- ΒΌ tsp chaat masala (optional, for extra tang)
- 1 small green chilli, finely minced (optional)
- Pinch of red chilli powder or paprika, for garnish
Instructions
- Whisk the yogurt. In a mixing bowl, whisk the yogurt until smooth and creamy.
- Add fresh ingredients. Fold in the grated (or finely chopped) cucumber, chopped mint, and fresh coriander.
- Season. Add the roasted cumin powder, black salt, and chaat masala. Add the minced green chilli if using. Mix well and adjust salt to taste.
- Chill. Refrigerate for 15β20 minutes to let the flavours blend and the raita chill.
- Garnish & serve. Top with a pinch of roasted cumin powder, a little red chilli powder, and a fresh mint sprig before serving.
Pro tip: Squeeze the excess water out of the grated cucumber before folding it in β this keeps the raita thick and creamy instead of watery. Roasting your own cumin and crushing it fresh gives the best smoky aroma.
