A classic Indian sweet where gram flour (besan) is slow-roasted in ghee until deeply golden and nutty, then bound with powdered sugar and cardamom and rolled into soft, melt-in-mouth ladoos. The halwai (sweet-shop) secret is patient low-and-slow roasting — that's what gives besan ladoo its signature aroma and grainy, tender texture. Perfect for Ganesh Chaturthi, Diwali, Raksha Bandhan and every festive occasion.

Ingredients

Main

  • 2 cups besan (gram flour) — coarse 'ladoo besan' preferred
  • ¾ cup desi ghee (clarified butter)
  • 1 cup powdered sugar (boora / tagar), sifted
  • ½ tsp green cardamom powder (elaichi)

Optional & Garnish

  • 2 tbsp fine semolina (sooji) — for extra granular texture
  • 2 tbsp chopped pistachios and almonds, to garnish
  • 1 tbsp melon seeds (magaz), optional

Instructions

  1. Melt the ghee. Heat the ghee in a heavy-bottomed pan or kadhai on low heat until fully melted.
  2. Add the besan. Add the besan (and sooji, if using) and mix well to combine with the ghee.
  3. Roast low & slow. Roast on low–medium heat, stirring constantly, for 15–20 minutes until the besan turns deep golden, smells nutty, and the ghee begins to separate. Do not rush this step — it's the key to great ladoos.
  4. Cool slightly. Turn off the heat and let the mixture cool until just warm (not hot) — about 8–10 minutes. Adding sugar to hot besan will melt it.
  5. Add sugar & cardamom. Mix in the powdered sugar and cardamom powder until evenly combined and the mixture holds together when pressed.
  6. Shape & garnish. While still warm, take small portions and roll into smooth round ladoos. Press a few chopped pistachios/almonds on top. Let them set for 20–30 minutes before serving.

Pro tip: Roast the besan low and slow — patience gives the signature halwai aroma and grainy texture. Always let the mixture cool to warm before adding sugar so it doesn't melt and turn the ladoos hard. Coarse 'ladoo besan' (or a spoon of sooji) gives that classic danedar bite.
