Indian milk cake — whole milk reduced with sugar and a touch of ghee until grainy, caramelised, and set into squares. A beloved mithai with a fudgy, halwai-style texture.

Ingredients

Main

  • 7 cups whole-fat milk
  • ½ cup granulated sugar (or brown sugar)
  • 1½ tbsp desi ghee
  • ½ tsp green cardamom powder
  • 1 tsp lemon juice (to curdle slightly, optional for grainy texture)

Instructions

  1. Reduce milk. Boil milk in a wide pan, stirring, until it reduces heavily. Add lemon juice if using for grainy curds.
  2. Sweeten and set. Add sugar and ghee; cook until thick. Spread in a greased tray, cool, and cut into squares.

Pro tip: Wide pan + patient stirring gives the signature grainy milk-cake texture — rushing yields plain barfi.

The Story Behind This Dish

Milk cake (often compared to kalakand) is slow love in a tray — hours of reducing milk are how families show devotion during Rakhi, Diwali, and weddings.
