For the Chole (Chickpeas):
White Chickpeas (Chole): 1 cup (soaked for 5–6 hours) [00:19]
Black Tea Powder: 3 tbsp (wrapped in a cotton cloth pouch for color) [00:42]
Salt: ½ tsp (for boiling) [00:49]
Water: For boiling (5–6 whistles) [00:49]
For the Masala (Gravy):
Vegetable Oil: 1/3 cup [02:18]
Whole Spices: 1 tsp Cumin seeds, 1 Cinnamon stick, 2 Black cardamoms, 3 Cloves, 1 Bay leaf, 1 Dry red chili [02:18]
Vegetables: 1 large Onion (finely chopped), 2 Tomatoes (pureed), Fresh coriander [00:33]
Fresh Paste: Ginger (1 piece), Garlic (5 cloves), Green chilies (3) – crushed into a coarse paste [00:33]
Powdered Spices: ½ tsp Turmeric, 1 tsp Red chili powder, 1 tsp Salt, 2 tsp Garam masala [03:02]
Secret Touch: 1 tbsp Desi Ghee (optional, for extra richness) [03:44]
For the Chaat Assembly:
Samosa (crushed), Sweet Yogurt, Chopped onions & tomatoes, Coriander chutney, Tamarind chutney, Sev, Papri, Pomegranate seeds, and Fresh coriander [04:03].
👩🍳 Preparation Steps:
Boil the Chickpeas: Add soaked chickpeas, salt, and the tea powder pouch into a pressure cooker. Cook for 5–6 whistles until tender and dark brown [01:18].
Prep the Base: Finely chop onions and puree the tomatoes. Grind ginger, garlic, and green chilies into a coarse paste [01:24].
The Tempering (Tadka): Heat oil in a pan. Add whole spices (cumin, cinnamon, cardamoms, cloves, bay leaf, red chili). Add onions and sauté until light brown [02:18].
Sauté Aromatics: Add the ginger-garlic-chili paste and cook. Pour in the tomato puree along with all the powdered spices. Cook until the oil separates from the masala [02:50].
Simmer: Add the boiled chickpeas (remove the tea pouch first). Let it simmer for 10 minutes until the gravy thickens. Finish with a spoonful of desi ghee [03:26].
Assemble the Chaat: In a bowl, crush a samosa, top with hot Pindi Chole, sweet yogurt, chutneys, chopped veggies, crunchy sev/papri, and pomegranate seeds [04:03].
