Ingredients:
• 2 Large Green Capsicums (Shimla Mirch)
• 2 Medium Potatoes (Aloo)
• 3 Garlic Cloves
• 1-inch piece of Ginger
• 2 Green Chillies
• 1/3 Cup Vegetable Oil
• 1 tsp Cumin Seeds (Jeera)
• 1 Dry Red Chilli
• 1 Black Cardamom (Badi Elaichi)
• 1/4 tsp Turmeric Powder
• 1 tsp Salt (to taste)
• 2 tsp Red Chilli Powder
• 2 tsp Garam Masala
Instructions Highlights:
1. Prep: Peel and dice potatoes into small cubes. Deseed and chop the capsicum into similar sizes [00:53].
2. Fry Potatoes: Heat oil and temper with cumin, red chilli, and cardamom. Fry the potatoes first until they are golden brown and almost cooked [01:42].
3. Add Capsicum: Add the chopped capsicum, spices, and fresh ginger-garlic paste [02:01].
4. Final Sauté: Cook for 5-7 minutes without covering the pan to maintain the crunch of the peppers [02:38].
