Ingredients
Vegetables:
1 kg Spinach (Palak), washed [00:14]
2 large Potatoes [00:23]
1 large Onion [00:23]
3 cloves Garlic [00:23]
Spices & Seasonings:
1/2 tsp Turmeric powder [00:34]
1 tsp Salt [00:34]
1 tsp Garam Masala [00:34]
1 tsp Cumin seeds [00:34]
3-4 Red Chillies (Whole dried) [00:34]
Cooking Medium:
1/3 cup Vegetable Oil [01:53]
Instructions
Prep the Vegetables:
Finely chop the onion and garlic. [00:46]
Peel the potatoes and cut them into thin strips (similar to french fries) so they cook faster. Wash them thoroughly with water. [01:14]
Finely chop the spinach leaves. [01:39]
Sauté Aromatics:
Heat the vegetable oil in a heavy-bottomed pan (kadhai). [01:53]
Add the cumin seeds and red chillies. [02:02]
Once the spices are fragrant, add the chopped onions and garlic. Sauté until they turn light brown (do not burn or brown them too darkly). [02:09]
Add Spices & Potatoes:
Add the turmeric, salt, and garam masala to the pan and mix well with the oil. [02:25]
Add the sliced potatoes. Let them cook in the oil for about 10 minutes until they become tender. [02:39]
Cook with Spinach:
Add the chopped spinach to the pan and mix everything together thoroughly. [02:56]
Do not cover the pan. Allow the spinach to cook uncovered as it will release a lot of water. Stir occasionally and let the water evaporate. [03:08]
Finish:
Continue cooking until all the water dries up and the oil starts to separate from the sides of the pan. This ensures the dish has a nice "crisp" texture. [03:23]
Serve hot with Roti, Paratha, and a side of Lassi. [03:43]
