The recipe for Ghiye Ki Sabzi (Bottle Gourd Gravy) :
Ingredients [00:00]:
1 bottle gourd
2 tomatoes
1 onion
2 garlic cloves
1 small piece of ginger
3 green chilies
Coriander leaves
1/4 cup oil
1 teaspoon cumin seeds
1 red chili
1 black cardamom
2 bay leaves
1 teaspoon garam masala
1 teaspoon salt
1 teaspoon turmeric powder
1 teaspoon red chili powder
1/4 teaspoon black pepper
Instructions [00:00]:
Prepare the Bottle Gourd: Peel the bottle gourd, cut it into small pieces, and wash it [00:17].
Cook the Bottle Gourd: Place the cut bottle gourd in a pressure cooker and cook for 3 whistles [00:29].
Chop Vegetables: Chop the onion, tomatoes, green chilies, coriander leaves, garlic, and ginger into thin slices [00:31].
Prepare the Gravy Base:
In a hot pan, add 1/4 cup oil.
Add 1 teaspoon cumin seeds, 1 red chili, 1 black cardamom, and 2 bay leaves. Let them brown [00:50].
Add the chopped onion and cook for 5 minutes until it turns brown [00:55].
Add the chopped ginger, garlic, and green chilies, and cook for another 5 minutes [01:00].
Add the chopped tomatoes [01:11].
Add Spices: Add 1 teaspoon garam masala, 1 teaspoon salt, 1 teaspoon turmeric powder, 1 teaspoon red chili powder, and 1/4 teaspoon black pepper. Mix well [01:14].

Combine and Finish:
