The secret to perfect, non-slimy okra in a rich onion-tomato gravy
A restaurant-style bhindi masala where the okra stays firm and never turns slimy — the trick is frying the bhindi first. It's then simmered in a rich, tangy onion, tomato and yogurt gravy with whole and ground spices. Perfect with roti, rice, or puri.

- Bhindi (okra), washed and thoroughly dried
Aromatics
- 1 red onion, finely chopped
- 4 green chillies, finely chopped
- Ginger, finely chopped
- 5 garlic cloves, finely chopped
Gravy Base
- 3 red tomatoes, blended into a smooth paste
- ½ cup yogurt, whisked until smooth
Whole Spices & Oil
- ⅓ cup vegetable oil
- 1 tsp cumin seeds
- 1 dried red chilli
- 1 cinnamon stick
- 1 bay leaf
- 1 black cardamom
Ground Spices
- 2 tsp garam masala
- ½ tsp turmeric powder
- 2 tsp red chilli powder
- ½ tsp black pepper
- 1 tsp salt (or to taste)
Garnish
- Fresh green coriander leaves, finely chopped
Instructions
- Prep the Vegetables. Cut off the tops and bottoms of the dried bhindi and cut into large pieces. Finely chop the onion, ginger, garlic, and green chillies. Blend the tomatoes into a smooth purée for a rich gravy.
- Fry the Bhindi (the secret step). Heat oil in a pan and fry the bhindi pieces until cooked through. This is crucial — it removes the sliminess and keeps the okra intact. Remove and set aside on a paper towel.
- Prepare the Masala Base. In a kadhai, heat ⅓ cup oil and add the whole spices (cumin, dried red chilli, cinnamon, bay leaf, black cardamom). Once fragrant, add the chopped onions and sauté until translucent. Add the ginger, garlic, and green chillies and sauté until light brown.
- Build the Gravy. Pour in the tomato paste and add all the ground spices (garam masala, turmeric, red chilli powder, black pepper, salt). Cook until the oil begins to separate from the masala. Lower the heat and gradually add the whisked yogurt, stirring continuously so it doesn't curdle.
- Final Simmer. Once the gravy is well combined and releasing oil, add the fried bhindi. Mix gently and cook for about 5 minutes so the okra absorbs the flavors (add a little water for a thinner gravy). Garnish with fresh coriander.
