Traditional Punjabi Khare Masale (Whole Spices) Layered Flavor Infusion

Ingredients

Main & Boiling

  • 1 cup urad dal (soaked at least 3–4 hours)
  • 3 cups water (for pressure cooking)
  • 4 cloves
  • 1 black cardamom
  • 1 cinnamon stick

Aromatics & Pastes

  • 4 red tomatoes (blended into a smooth paste)
  • 1 red onion (finely chopped)
  • 1–2 green chilies (finely chopped)
  • 1 tbsp ginger & garlic (coarsely pasted)

Tempering (Tadka) & Spices

  • ⅓ cup cooking oil
  • 1 tsp cumin seeds
  • 1 bay leaf
  • 1 black cardamom & cinnamon stick
  • 1 dried red chili
  • 2 tsp garam masala
  • 1½ tsp salt (adjust to taste)
  • ½ tsp black pepper powder
  • 1 tsp turmeric powder
  • 1 tbsp red chili powder
  • 1 large cube butter (plus extra for serving)

Instructions

  1. Boil the Dal. In a pressure cooker, combine the soaked urad dal with 3 cups of water, 4 cloves, 1 black cardamom, and 1 cinnamon stick. Bring to the first whistle on high heat, then lower the flame completely and simmer for about 25 minutes for a soft texture and rich red color.
  2. Prepare Aromatics. While the dal is boiling, finely chop the onions and green chilies. Make a coarse ginger-garlic paste, and blend the tomatoes into a smooth purée.
  3. Start the Tempering. Heat ⅓ cup of oil in a wide pan or kadhai. Add 1 tsp cumin seeds, a bay leaf, black cardamom, cinnamon stick, and 1 dried red chili.
  4. Sauté Onions & Aromatics. Add the chopped green chilies and onions, sautéing until light golden-brown. Stir in the ginger-garlic paste and cook briefly to remove the raw aroma.
  5. Add Tomatoes & Spices. Pour in the tomato paste, followed by 2 tsp garam masala, 1½ tsp salt, ½ tsp black pepper, 1 tsp turmeric powder, and 1 tbsp red chili powder. Mix thoroughly and cook until the oil separates from the sides.
  6. Combine & Simmer. Pour the boiled dal directly into the prepared masala, mixing well. Simmer gently on low heat for at least 10 minutes to merge the flavors.
  7. Butter Finish & Serve. Stir in a large cube of butter (add more for party richness). Serve hot with fresh naan or steamed rice.

Pro tip: Boiling the dal with whole spices (khare masale) ensures the aromatic oils infuse deep inside the lentils rather than sitting only on the surface — giving you true Punjabi dhaba flavor.
