The recipe for preparing the Indian dish Chana Masala, also known as chickpeas gravy:
1. Prepare the Chickpeas
Take 1 cup of white chickpeas (chole) and soak them in water overnight.
Boil the soaked chickpeas for 20 minutes.
2. Prepare the Gravy Paste
For the gravy, you will need 1 onion, 3 tomatoes, 3 garlic cloves, 1 cube of ginger, and 3 green chilies.
Chop the onion and dice the tomatoes, then blend all of these ingredients together to form a smooth paste.
3. Cook the Gravy
In a hot pan, add a quarter cup of oil and then add the following whole spices: 1 teaspoon of cumin seeds, 1 red chili, 3 cloves, 2 black peppercorns, and 1 bay leaf.
Add the chopped onion and cook until it turns brown.
Pour in the tomato paste and continue to cook.
Add the dry spices: 1 tablespoon of garam masala, half a teaspoon of turmeric powder, 1 tablespoon of red chili powder, 1 tablespoon of salt, and 1 tablespoon of Chana Masala powder.
Let the gravy cook until the oil begins to separate from the mixture.
4. Combine and Serve
Add the boiled chickpeas to the gravy.
Allow the mixture to boil until the gravy thickens to your desired consistency.
The final dish is ready to be served, accompanied by fried bread (bhature) and sliced onions and tomatoes.
