Colorful bell peppers, carrots & onion tossed with pasta in a rich marinara — quick, easy & tasty
A quick and colorful veggie marinara pasta — boiled pasta tossed with sautéed bell peppers, carrot, onion and tomatoes in a rich marinara sauce, seasoned simply with salt and black pepper. Ready in about 20 minutes and perfect for an easy weeknight dinner the whole family will love.
Ingredients
Pasta
- 1 cup pasta (any style)
- 3 cups water, for boiling
- 1 tsp oil, for the boiling water
Vegetables (chopped)
- 1 green bell pepper, sliced
- 1 red bell pepper, sliced
- 1 carrot, julienned
- 1 red onion, sliced
- A handful of cherry tomatoes, halved
- 2 green chillies, chopped (optional)
Sauce & Seasoning
- ¼ cup oil, for sautéing
- 1 cup marinara sauce (or to taste)
- 1 tsp salt
- ½ tsp black pepper
Instructions
- Boil the Pasta. Take 1 cup of pasta (any style) and boil it in 3 cups of water for about 10 minutes, adding 1 teaspoon of oil to the boiling water. Check it's done by pressing a piece between your fingers, then strain.
- Chop the Vegetables. While the pasta boils, chop all the vegetables — the bell peppers, carrot, onion, cherry tomatoes and green chillies.
- Sauté the Veggies. Heat ¼ cup oil in a pan and add all the chopped vegetables. Sauté for about 5 minutes — don't overcook them; you want them vibrant and slightly crisp.
- Add Pasta & Sauce. Add the boiled pasta to the pan, then the marinara sauce, 1 teaspoon salt and ½ teaspoon black pepper.
- Mix & Cook. Mix everything together and cook for about 5 minutes until well combined and hot. Serve colorful and delicious!
Pro tip: Don't overcook the vegetables — a quick 5-minute sauté keeps them colorful, crisp and fresh. Adding a teaspoon of oil to the pasta water helps keep the pasta from sticking while it boils.
