A quick, protein-rich black chana (kala chana) chaat that's fresh, tangy, and satisfying — up to 15g of protein per bowl. The secret is sautéing the boiled chana until slightly crispy before tossing with crunchy vegetables and a zesty lemon dressing.

Ingredients

Base

  • Black chana (kala chana), soaked 5–6 hours
  • Water (for pressure cooking)

Vegetables

  • Small red tomatoes (firm, not over-ripe)
  • Red bell pepper (seeds removed)
  • Green bell pepper (seeds removed)
  • Seedless cucumber
  • 1 red onion
  • Green chilies (adjust to spice preference)

Seasoning & Garnish

  • 1 tbsp vegetable oil
  • 3 tsp salt (divided)
  • ½ tsp black pepper
  • Fresh lemon juice (1 large lemon for the pan + 1 more for finishing)
  • Fresh green coriander leaves

Instructions

  1. Boil the Chana. 0:46 Add the soaked black chana to a pressure cooker with water. Cook for at least 4 whistles until tender but not mushy.
  2. Prep the Vegetables. 0:58 While the chana cooks, finely chop all the vegetables. Remove the seeds from the bell peppers before chopping. (You can also add extras like olives or jalapeños if you like.)
  3. Sauté the Chana. 1:30 Heat 1 tbsp vegetable oil in a pan. Add the boiled chana, 2 tsp salt, ½ tsp black pepper, and the juice of one large lemon. Mix well and cook until the lemon juice is absorbed and the chana becomes slightly crispy.
  4. Cool. 2:03 Let the chana cool for at least 10 minutes before mixing with the fresh vegetables.
  5. Assemble. 2:27 Combine the sautéed chana with the chopped vegetables in a bowl. Add the remaining 1 tsp salt, the juice of one lemon, and fresh chopped coriander leaves.
  6. Serve. 2:41 Mix everything thoroughly. Your delicious and healthy Black Chana Chaat is ready to serve!

Pro tip: Sautéing the boiled chana with lemon juice until slightly crispy adds a lovely texture and a zesty depth — don't skip it. Let it cool before tossing with the veggies so they stay crunchy and fresh.
