Besan Ladoo (Festival Special)
Grainy, melt-in-the-mouth besan ladoo — Rakhi & Diwali favourite
Classic besan ladoo — gram flour roasted low and slow in desi ghee until deep golden and fragrant, then sweetened with sugar and cardamom and rolled into rounds. A festive mithai that's easy to make at home.
Ingredients
Main
- 2 cups besan (gram flour)
- 1 cup pure desi ghee
- 3 cups granulated sugar (or to taste)
- ½ tsp green cardamom powder
- Crushed pistachios, for garnish
Instructions
- Heat ghee and roast besan. 0:20 Heat desi ghee in a pan. Add the besan and roast on low–medium heat, stirring constantly, until golden brown and nutty.
- Add cardamom. 0:40 Stir in the green cardamom powder, then turn off the heat.
- Cool. 0:47 Let the mixture cool completely before adding sugar.
- Mix and shape. 0:51 Add the granulated sugar and mix until the mixture holds together like dough. Roll into ladoos with your hands.
- Garnish. 1:22 Press crushed pistachios on top and let the ladoos set before serving.
Pro tip: Roast the besan patiently until it smells like halwai shop — rushing leaves a raw taste. Only add sugar once the mixture is fully cool, or the ladoos turn hard.
