Meethi Seviyan (Sweet Vermicelli)
Desi ghee roasted vermicelli with brown sugar and nuts
Meethi seviyan — fine vermicelli roasted in desi ghee with almonds and cashews, sweetened with brown sugar and cardamom. A quick Eid, Diwali, and Navratri dessert.
Ingredients
Main
- 1½ cups seviyan (vermicelli), broken
- ½ cup brown sugar
- ¼ tsp green cardamom powder
- ¼ cup sliced almonds and cashews
- 5 tbsp desi ghee
Instructions
- Roast. Heat 3 tbsp ghee; roast nuts until golden. Remove. Add remaining ghee and roast seviyan until golden.
- Sweeten. Add sugar, cardamom, and a splash of water. Cover and cook on low until seviyan is soft and ghee separates.
- Serve. Garnish with nuts and serve warm.
Pro tip: Roast vermicelli evenly before adding sugar — it prevents clumping and gives a nutty halwai-style flavour.
The Story Behind This Dish
Sweet seviyan is shared at Eid and Hindu festivals alike — thin roasted noodles in ghee and sugar are a cross-community symbol of joy and hospitality on festive mornings.
